BANANA BREAD WITH NUTELA SWIRL

Ingredients
  • 2 medium ripe bananas
  • 2 eggs
  • ¼ cup Nutella (about 70 gr)
  • ½ cup brown sugar (100 gr)
  • 5 Tbs vegetable oil (75 ml)
  • ¼ cup heavy cream (60 ml)
  • 1,5 cup flour (210 gr)
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup roughly chopped walnuts (65 gr)
  • 2 tsp vanilla extract
Instructions
  1. Preheat your oven to 350 F (180 C). Grease and line your loaf pan with parchment paper.
  2. Heat Nutella in the microwave so it has a pourable consistency (you can also do this over a double boiler).
  3. Mash bananas using a fork and place in the bowl of your stand mixer.
  4. Add the oil, sugar and vanilla extract, beat together for a few minutes.
  5. Add the eggs one at a time and blend well.
  6. Combine the dry ingredients in a separate bowl.
  7. Add the flour mixture into the batter in three batches, alternating with the heavy cream. Mix just until blended on the lowest speed.
  8. Mix in the walnuts and pour batter into your loaf pan.
  9. Pour over the softened Nutella and swirl gently using a toothpick in order to slightly mix it with the batter.
  10. Bake for 55-60 mins or until a toothpick inserted comes out clean.
  11. Cool for 15 minutes in the pan then transfer on to a cooling rack.
  12. Oh and enjoy a slice or two while it's still warm : )
