CANDIED ORANGE PEEL

Ingredients
  • 3 oranges
  • 1 cup granulated sugar
  • 2 cups water
  • 50-100 gr chocolate
  • caster sugar for rolling the peels
Instructions
  1. Peel the oranges vertically and cut each segment into strips. You can also juice your orange and after removing the pulp with a spoon, you can cut the orange halves into strips.
  2. Cover with water and bring to boiling point. Simmer on a medium high heat for fifteen minutes and repeat three times, changing the water each time.
  3. Combine sugar and water in a sauce pan and bring to boil and add the orange strips. Reduce heat to med low and simmer until translucent, about 45 minutes.
  4. Drain well and toss the peels in caster sugar, place on a cooling rack making sure they don't touch each other. They might take up to a couple of days to dry.
  5. Melt the chocolate in a double boiler and dip the peels, shake off excess. Place on baking parchment to dry. Store in an airtight container.
Notes
Cooking time may vary depending on the type of orange.

Can be chopped and used in cakes and cookies.

You will be left with an amazing orange flavoured sugar syrup that you can use to make cocktails, lemonade or even to soak a cake.

I usually dip only half the peels in chocolate, if you want to have them all chocolate dipped you will need more chocolate.
