BANANA BREAD WITH NUTELA SWIRL

- 2 medium ripe bananas
- 2 eggs
- ¼ cup Nutella (about 70 gr)
- ½ cup brown sugar (100 gr)
- 5 Tbs vegetable oil (75 ml)
- ¼ cup heavy cream (60 ml)
- 1,5 cup flour (210 gr)
- ¾ tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- ½ cup roughly chopped walnuts (65 gr)
- 2 tsp vanilla extract
- Preheat your oven to 350 F (180 C). Grease and line your loaf pan with parchment paper.
- Heat Nutella in the microwave so it has a pourable consistency (you can also do this over a double boiler).
- Mash bananas using a fork and place in the bowl of your stand mixer.
- Add the oil, sugar and vanilla extract, beat together for a few minutes.
- Add the eggs one at a time and blend well.
- Combine the dry ingredients in a separate bowl.
- Add the flour mixture into the batter in three batches, alternating with the heavy cream. Mix just until blended on the lowest speed.
- Mix in the walnuts and pour batter into your loaf pan.
- Pour over the softened Nutella and swirl gently using a toothpick in order to slightly mix it with the batter.
- Bake for 55-60 mins or until a toothpick inserted comes out clean.
- Cool for 15 minutes in the pan then transfer on to a cooling rack.
- Oh and enjoy a slice or two while it's still warm : )
